What’s the difference between a ribeye and a sirloin?
Ribeye is known for its marbling and rich flavor, while sirloin is leaner and firmer in texture. Ribeye is ideal for grilling or pan-searing when you want a juicy, flavorful steak. Sirloin is a versatile cut great for grilling, stir-fries, or kabobs.
Do you offer custom cuts?
Yes! We’re happy to cut to your preference — just let us know how thick you want your steaks, how much meat you need, or if you have a specific request. Custom orders are one of our specialties.
How should I store fresh meat at home?
Store meat in the coldest part of your fridge (typically the bottom shelf) and use or freeze it within 2–3 days. For longer storage, wrap it tightly in freezer paper or vacuum-seal before freezing.
What’s the best way to thaw frozen meat?
The safest method is to thaw it slowly in the refrigerator overnight. If you're short on time, you can use the cold water method—place the sealed meat in a bowl of cold water, changing the water every 30 minutes.
Which cuts are best for slow cooking or smoking?
Tougher cuts like chuck roast, brisket, pork shoulder, and ribs become tender and flavorful when cooked low and slow. They’re ideal for crockpots, smokers, or braising.
How can I tell when my meat is done cooking?
The most accurate way is with a meat thermometer:
- Beef (medium): 140–145°F
- Pork: 145°F
- Chicken: 165°F
Letting meat rest for 5–10 minutes after cooking helps juices redistribute.

What’s the best steak for grilling?
